Cozy Chicken Liver Pâté with Pickled Onions & Toast

Recipes

When most people think of organ meats, they imagine old-world recipes or something a little intimidating. But here’s the truth: organ meats are some of the most nutrient-dense, affordable, and flavorful cuts you can buy.

One of our favorite entry points? Chicken liver pâté. It’s silky, savory, and downright indulgent — yet simple to make at home. Paired with tangy pickled onions and crunchy toast, it’s the kind of dish that feels restaurant-fancy but comes together in under an hour.

Why eat organ meats?

  • Nutrition powerhouse: Chicken livers are high in iron, vitamin A, and B vitamins.

  • Sustainability: Eating the whole animal honors the life of the animal and reduces waste.

  • Flavor: When cooked properly, organ meats are tender and delicious.

Recipe: Chicken Liver Pâté with Pickled Onions ON TOAST

Ingredients (Serves 4–6 AS AN APPETIZER)

  • 1 lb chicken livers (Washtenaw Meats, cleaned & trimmed)

  • 4 Tbsp butter, divided

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 tsp fresh thyme (or ½ tsp dried)

  • 2 Tbsp brandy, cognac, or dry sherry (optional, but worth it)

  • ½ cup heavy cream

  • Salt & pepper to taste

For quick-pickled onions:

  • 1 red onion, thinly sliced

  • ½ cup apple cider vinegar

  • ½ cup water

  • 1 Tbsp sugar

  • 1 tsp salt

To serve:

  • Toasted baguette slices or crackers

Instructions

  1. Pickle the onions: In a jar, combine vinegar, water, sugar, and salt. Stir until dissolved. Add sliced onions, cover, and let sit at least 30 minutes (or overnight in the fridge).

  2. Cook the livers: In a skillet, melt 2 Tbsp butter. Add onion and garlic, sauté until softened. Add chicken livers and thyme, cook 4–5 minutes until browned outside but still slightly pink inside. Don’t overcook — that’s key to a creamy pâté.

  3. Deglaze: Add brandy/sherry and cook until mostly evaporated. Remove from heat.

  4. Blend: Transfer everything to a food processor. Add remaining butter, cream, salt, and pepper. Blend until silky smooth. Taste and adjust seasoning.

  5. Chill: Transfer pâté into ramekins or a small dish, smooth the top, and refrigerate at least 2 hours (it firms as it chills).

  6. Serve: Spread pâté generously on toast, top with pickled onions, and enjoy!

Tips & Variations

  • For a dairy-free version, swap olive oil for butter and coconut cream for heavy cream.

  • Add a pinch of smoked paprika for depth.

  • Make it ahead — pâté keeps up to 5 days in the fridge.

✨ Eating organ meats isn’t just about nutrition — it’s about reconnecting with a food tradition that values the whole animal. This recipe proves that doing so can be both practical and downright delicious.
